Ovenbaked Rosemary Chicken

I tried creating my own version of Amici's Pollo Arrostito and it was a success! It was so simple and easy to cook but the taste is so heavenly. I plan to make this dish a regular on our family dinners.

Ingredients

1 whole spring chicken
small bottle of olive oil
rosemary
lemon
carrots
potato
salt and pepper

Preheat the oven for 250 degrees for 20 minutes. Rub the chicken with olive oil and then season with salt and pepper.  Arrange the sliced carrots and potatoes. Pour the rest of the olive oil. Sprinkle with rosemary. Put the sliced lemon on top. Bake for 1 hour.
