With more than 15 years of experience, Chef Marc honed his craft at Melbourne’s prestigious Crown Casino and now lends his expertise to dnata Inflight Catering. Known for his creativity and precision, he was crowned Dessert Champion at the 2024 World Food Championship – Australia and landed in the Top 7 at the World Food Championship in Indianapolis.
At the Manila showcase, Chef Marc delighted guests with desserts like Dried Mango Rum Baba, PiƱacolada Pavlova, and Winter Morning, each one inspired by Filipino ingredients but elevated for the global stage.
Chef Princess Anne Uy: Blending Filipino Roots with Japanese and Australian Flair
Chef Anne has taken on leadership roles in Melbourne’s top culinary institutions, from Nobu to Crown Casino and Marvel Stadium, where she managed large-scale catering for concerts featuring artists like Lady Gaga, Nicki Minaj, and U2.
Her accolades include the Silver Knife Bocuse d’Or Australia – National (2025) and second place in Seafood at the World Food Championship in Dallas (2023). For Taste of the Philippines, her menu wowed diners with creations such as Umami Lechon Belly Roll, Prawn Toast Kare-Kare Bonito, Chicken Moringa Chawanmushi, and Seafood Udon.
