Mega Creations Premium Spanish Sardines: From Pio's Kitchen To Yours

5/1/16

Mega Global Corporation hosted the #TasteTheLove Luncheon for Mega Moms last April 28 at Pio's Kitchen in Quezon City. We were treated to a sumptuous lunch prepared by Chef Chin using Mega Creations exquisitely tasting, mouthwatering premium oil-based sardines made with only the freshest catch that has gone through Mega Sardines' signature 12-hour catching-to-canning process.

Mega Creations is available in four unique bottled selections. My personal favorite is the Premium Spanish Sardines in Olive Oil Hot. Other variants are Mega Creations Spanish Style Sardines Hot, Mega Creations Premium Spanish Sardines in Tomato Sauce and Oil and Mega Creations Premium Spanish Sardines in Corn Oil.

How do you like your Spanish sardines?

I am very much okay with pairing Mega Creations Premium Spanish Sardines in Olive Oil with a hot bowl of rice. Simple yet satisfying. And though Mega Creations premium selection tastes so good straight from the bottle, Mega Mom Chef Chin Gallegos-Bagis of Pio's Kitchen shared with us four easy to prepare recipes and I will be sharing them to you too!

We were divided into four groups as we participated in the cooking contest judged by Chef Chin. My group's version of the Tomato Arugula and Sardine Pasta won the Best Recipe.

Tomato Arugula and Sardine Pasta

1 pack of 450 grams Spaghetti Noodles
5 cloves of garlic, slivers
4 pieces of tomatoes, cut into wedges
1/2 cup Mega Creations Premium Sardines in Olive Oil, shredded
1 cup fresh Arugula
1 piece chopped red chili
1/2 cup pasta water (from the boiled pasta)
Salt and pepper to taste
Olive oil

Boil pasta and cook for 9 minutes. Saute garlic and tomatoes with olive oil until soft. Add the Mega Creations Premium Sardines in Olive Oil and chili. Season with salt and pepper. Add the pasta water and let it simmer. Once pasta is cooked, drain and toss into the sauce. Serve topped with the fresh arugula and extra virgin olive oil. Sprinkle with parmesan cheese and add more chili if desired.

Sardines and Potato Croquettas Wrapped In Lettuce and Tartar Sauce

1/2 kilo potatoes, boiled, peeled and mashed
2 tablespoons butter
1/4 cup milk
1 tablespoon all purpose flour
1/4 cup Mega Creations Premium Sardines in Corn Oil, mashed
Lollo Rosso green lettuce to garnish

Breading:
Egg
Flour
Bread crumbs

Tartar Sauce:
1/4 cup mayonnaise
2 tablespoons cream
1 tablespoon pickle relish
1 teaspoon dill

Make mashed potatoes in a bowl with butter, milk and flour. Add Mega Creations Premium Sardines in Corn Oil and mix. Form mixture into small balls and refrigerate until set. For the breading, prepare in three separate bowls the flour, egg and breading. Roll the ball mixture in the flour, the dip in the egg and then the breading. Fry the potato croquettas until golden brown. Serve with tartar sauce and lettuce.

Open-faced Spicy Cheesy Sardine Quesadillas

1/2 cup Mega Creations Premium Sardines in Tomato Sauce and Oil
2 teaspoons garlic
1 tablespoon onions
1 tablespoon basil, chopped
10 wheat flour tortillas
250 grams salami
1 cup mushrooms
Quickmelt cheese
Mozzarella
Fresh basil for garnish

Saute onions and garlic. Add the Mega Creations Premium Sardines in Tomato Sauce and Oil and basil. Set aside. Assemble the quesadilla. Spread the sardine mixture on top of the wheat flour tortilla. Top with salami, mushroom and cheese. Bake at 180 degrees for 10 minutes or until golden brown.

Creamy Spinach and Sardines Baked with Pita Chips

2 tablespoons butter
2 tablespoons all purpose flour
1 cup milk
1/2 cup spinach, boiled and chopped
1/2 cup cream cheese
1/4 cup Mega Creations Premium Sardines in Soya Oil, shredded
Mozzarella
Salt and pepper to taste

Melt butter on a pan. Add flour to make a roux. Add milk slowly while whisking. Add cream cheese and whisk until smooth and creamy. Add the spinach and Mega Creations Premium Sardines in Soya Oil. Mix and remove from heat immediately to avoid overcooking the spinach. Place the mixture in a baking bowl and top with mozzarella. Bake at 125 degrees for 20 minutes.

It was a fun afternoon with these lovely moms. We did not only tasted the love, we felt the love. We are all very excited to cook these recipes at home and let our family #TasteTheLove.

Thank you so much Mega Global Corporation for having me. And although the classic Mega Creations Spanish Sardines straight from the bottle brings me comfort, it's great to know that there are exciting gourmet spanish sardines dishes I can serve to my guests.
