This time, the renowned Filipino restaurant is teaming up with the Melbourne-based culinary collective Adobros, led by visionary Filipino-Australian chefs Michael Pastrana and Morris Danzen Catanghal.

The result? A thrilling cross-cultural culinary collaboration that reimagines traditional Filipino dishes with contemporary Australian flair—showcasing the richness of Filipino flavors while embracing global techniques and diverse palates.

A Fusion of Cultures and Flavors

The idea for this exciting collaboration sparked during a chance meeting in Melbourne between Chef Roland Laudico and the Adobros team. What began as a conversation about Filipino heritage evolved into a creative culinary venture aimed at elevating Filipino cuisine for an international audience.

“This partnership marries time-honored Filipino recipes with contemporary ingredients and techniques,” says Chef Laudico. “By integrating local Australian produce and modern cooking styles, we’re creating dishes that honor tradition while embracing innovation.”

At the heart of this collaboration is a bold yet respectful reinvention of beloved Filipino classics. Drawing inspiration from modern Australian cuisine, Mediterranean and Italian influences, and Filipino culinary traditions, each dish tells a story of identity, memory, and evolution.
